In the last couple of weeks, I have been busy sharing my table with ..............

.... My daughter and son-in-love and my grandchildren
.... My son and daughter-in-love
.... My daughter-in-love and my grandchildren
.... My granddaughter, Lily
.... My husband
.... My LORD

I have shared my breakfast table, my lunch table, a snack table, and my supper table with those that I love. The last two weeks, I have shared the Sunday Table with ALL of the Family!!! It has been a wonderful time around the family table! We have shared our lives, our work, our desires, our problems, and our Lord! I am so glad that we have the opportunity to sit down and have time together. If you have the time and even if you don't -- make the time-- to sit with your family and enjoy a meal, talk about "stuff", share your dreams and hopes, give Thanks to our Lord for all of His Blessings on your family!

Sharing my JOY!

Good Morning!

Just thought that I would share my newest recipe with you all. It is so good - low in calories - great in taste!

Shrimp and Asparagus Frittata

4 Eggs
10 Spears of Asparagus (steamed and cut diagonally)
6 Shrimp (cooked and cut into small bit sizes)
1/3 Cup of Swiss Cheese (shredded)

Mix eggs well, add all other ingredients. Pour into a hot greased skillet, cook on stove for a couple of minutes, don't stir; then put into hot oven. Bake at 350 degrees for about 12 -15 minutes, or until eggs are set! Enjoy!

Hummm..... this will go well with the Tomato Basil Soup and a Green Salad for a wonderful lunch to share at YOUR table.

Tomato Basil Soup

Creamy Tomato Soup, 1 container (4 cups)

Organic Tomato Basil Pasta Sauce, 1 container (3 cups ea.)

Mix together, heat and serve.

Serves 6

This is soooo good! Everyone wanted the "recipe".

Breakfast "Muffins"

6 Eggs
1 Cup Egg Whites
1 Cup Sharp Cheddar Cheese
1/2 Cup Baby Bellas
1/2 Cup Green Peppers
1/2 Cup Chopped Onion
1/2 Cup Diced Ham

Mix all ingredients together. Pour into regular size muffin cups that have been sprayed with oil. Bake for 20-25 minutes at 350 degrees. Each one is about 100 Calories and so tasty! The best part is that you can put whatever you like into these "muffins". Spinach, Feta Cheese, Bacon, Swiss, Sausage, Mushrooms... I have even done some with "Buffalo Chicken" and Gorgonzola. Hope you will try these using your own taste buds!

Serves 6 (Two per person)

Hi there!

It has been a while since I have been here........... sorry! While I was away I have taught Vacation Bible School for TWO weeks along with Sunday School every week, I have had my husband in the hospital for kidney stones (he is home recovering), I have lost 24 pounds since July 4th --- yeah for me! I am trying to go to the gym at least 3-4 times a week and walk somewhere, last night we walked down town, it was a lovely evening and we happened upon some wonderful Christian music on the college green. I hosted a Tea Party honoring Lindsey, from Iowa on Monday, August 15th........ it was lovely! I will be sharing some of the recipes from that Tea Party!

Tonight, I made:

An Angus Beef Roast sliced and put into gravy, served with Brown Rice and steamed Carrots with olive oil butter, tomatoes and cucumbers. It was so good! It is a "Live It" dinner! :O) I have been sharing my table with my son Jeremy, my daughter-in-love Kristen, and my two sweet Grandchildren! This has been such a good week of them visiting. I'm not sure what tomorrow will bring but for sure it will be full of JOY!

THIS IS DIET FOOD?????????

I cleaned my plate!

As this month, July, came in, I decided to start something new! A live it! NOT a diet! A change of how I cook, eat, and live! With it came a lot of information, a LOAD of information! *Still processing it.* I do see somethings that absolutely have to change first. The way I am thinking about what I eat or don't eat is one of those things. When I was a little girl I was told to "clean my plate", as an obedient child, I did what I was told to do. I CLEANED MY PLATE! Now though, I really don't HAVE to clean my plate, but the thinking and the attitude are still there. (I am working on it.)

So, since I have someone keeping me accountable, I have decided to revamp some of my favorite recipes and still eat what I like but more importantly what is good for me. Tonight's dinner was Stuffed Bell Peppers. I used the basic "old" recipe but put better things in it. For example, for the white rice that I usually use, I put Quinoa & Whole Grain Brown Rice, for the ground beef I used Laura's Beef (organically raised), organic mushrooms, onions, and garlic. Topped off with a fresh made Salsa. Thanks Kristen! This was really very good! Better than the original recipe! For a whole pepper stuffed the calories were only 350! Now that is good eating!

The Table as a Tea Party!

I just had the pleasure of the company of the most important people in my life....
My Grandchildren!
Tea Parties are so much fun and each one of the children ask for them.
the Girls AND the Boys!
Since the grandchildren from Tampa were in town, and everyone was excited to see them;
we, had a Tea Party at DD's house Tuesday Afternoon.
Each one came to DD's dressed and ready to have "tea"...
although, this day we had Lemonade with our Tea Time Treats!
Which included Ritz Crackers with heart shaped cheese on top, White Grapes,
Mini Chocolate Chips Cookies, and Piroulines (artisan rolled wafers filled with chocolate).
Instead of Hot Tea as we usually do, we had a summer special: Lemonade!
Everyone had a wonderful time and learned that they should not
talk with their mouths full of food!

The close of yet another holiday with family............

My table was full this 4th of July! We cooked out........ Turkey Burgers, Beef Burgers, Chicken, and had Salad; good food that was good for us! We all sat around the table and had wonderful fellowship with each other. A time of relaxing and reconnecting. A time of fun and fellowship, of bonding and sharing, just being together to revive our family connection! We laughed, played, ate, talked, etc... about everything and every body. We seemed to draw closer this year than any other year. What a wonderful time Sharing My Table!!!

If you have an old table or one that needs some TLC you can..............

Just use a table cloth or a sheet to cover the table. Tie knots on the sheet corners, or use ribbons, or rubber bands, then add a flower (real or fake) or a butterfly (fake, of course) or cookie cutters, anything you have just be creative.

Also, you could tie ribbon on the chairs to tie it all together. Simple elegance is always beautiful!

Hello there everyone!

In the last week I have had the opportunity at least five times to give, offer, or share my recipes or advice in cooking..... So I thought that I would start sharing on a blog site a few times a week. I hope that you will enjoy and / or benefit from some small thing that I might share. Oh, the recipes are really good too! If any of you have a question or a problem with cooking or baking I will try to answer it from my years of cooking and baking. This seems to be my JOY!

In HIM is fullness of JOY!
DD

Easy Peach Cobbler

Easy Peach Cobbler

1 stick butter (not margarine)(1/2 cup)
1 cup self-rising flour
1 cup of sugar and 1/2 cup of sugar (for fresh peaches)
1 cup of milk
4 cups of sliced fresh peaches (or one large can of sliced peaches in it's own juices [drained] no need for the 1/2 cup of sugar.)

Melt butter in 2-quart glass baking dish or casserole. Stir together flour and 1 cup sugar; add milk and mix well. Pour into butter; stir gently. Add peaches that have been tossed with remaining 1/2 cup sugar or add drained canned peaches. DO NOT STIR. Bake at 375 degrees for about 40 minutes. Serve with vanilla ice cream or whipped cream. Serves 6

This is a never fail recipe... unless of course you use plain flour! LOL :O) I made that mistake once!
